BAKED SWEET POTATO w/ Fajita Chicken & Spinach!

Happy New Year!

With the New Year comes new beginnings, new challenges and maybe even new resolutions.

Then again, maybe not.

Maybe you have a recurring resolution, like me, which is to lose weight in hopes that this is YOUR year.

Well, it is!

I want to share with you one of my favorite New Year recipes that I found via Pinterest.

Sweet Potato
Boneless Chicken Breast(s)
Fresh Spinach leaves
1 pkg. Old El Paso (Lower Sodium) Fajita mix

I baked/cooked mine differently...

Preheat oven to 400 degrees.
Place Sweet Potato on a cookie sheet, bake for 45 minutes.
While it's baking, cut a chicken breast into cubes. Set aside.
Heat 1 tablespoon of cooking oil in a pan, add cubed chicken breast.
Cook until no longer pink.
Drain, return to pan.
Add Old El Paso Fajita mix, follow directions on the package.
Add Spinach leaves, sauté until all the leaves wilt.

Spoon mixture on top of Sweet Potato and ENJOY!
