Beefstro Bruschetta Burgers - OH, MY!

I swear, I'm slowly turning into a "Foodie Blogger". I'm going to have to change my blog name to "The Food Network Housewife".

Yesterday marked Week #8 of the Food Challenge with my Sis.

On the menu: BEEFSTRO BRUSCHETTA BURGERS.



What You'll Need:
3 tblspns Dijon mustard
3 tblspns reduced-sugar apricot preserves
1 tblspn prepared horseradish
2 thin slices prosciutto or deli ham, chopped
1 lb. lean ground beef
3/4 tspn lemon-pepper seasoning
8 slices French bread (1/2 inch thick!) - I opted for Whole Wheat French Bread.
1 cup fresh arugula or baby spinach
2 oz. Brie cheese, cut into 8 thin slices
1/4 cup julienned roasted sweet red peppers
 
Directions:
In a small bowl, combine the mustard, preserves and horseradish.

In a small skillet coated with cooking spray, cook and stir prosciutto over medium heat until lightly browned. Set aside.

In a large bowl, combine ground beef and lemon-pepper. Shape into eight patties.

Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from heat for 3-4 minutes on each side or until a thermometer reads 160° and juices run clear. Remove and keep warm. (To save time and energy, I grilled the patties on our George Foreman Grill.)

Grill or broil bread for 1-2 minutes on each side or until toasted.

Spread each slice of toast with 1-1/4 teaspoons reserved mustard sauce. Layer each with arugula/spinach, a burger, a cheese slice and 1-1/4 teaspoons additional sauce. Garnish with peppers and prosciutto.

Serve immediately.

P.F. Changs Orange Peel Chicken!

Wednesday marked Week #7 of the Food Challenge with my Sis! 


 

And oh, what a challenge it was.

It was messy.

Hot grease popped all-up-in my right eye. Ain't nobody got time fo'dat!

But it was so unbelievably delicious that I couldn't believe I MADE IT!

Wanna make it too?

What You'll Need:
1 tblspn vegetable oil
2 tblspns minced garlic
4 green onions, sliced
1 cup tomato sauce
1/2 cup water
1/4 cup granulated sugar
2 tblspns chili garlic sauce
1 tblspn soy sauce
1/2 cup vegetable oil
4 chicken breasts, boneless, skinless
1 egg, beaten
1 cup milk
1 cup flour
peel from 1/4 orange, julienned (into 1/8″ thick strips)

Directions:
(Make the sauce): In a medium saucepan, heat oil; add garlic and
onions; do not let the garlic burn; add tomato sauce; bring to boil.

Add sugar, chili sauce and soy sauce; bring to boil; simmer five to
six minutes or until sauce thickens; remove from heat.

Prepare chicken: In wok or large skillet, heat oil. Meanwhile
cut chicken breasts into bite-sized pieces.

In medium bowl combine egg and milk; mix well. Place flour in
shallow dish.

Coat chicken pieces – first in the flour, then the egg wash and
back into the flour. Cook in 2 or 3 batches until all chicken is
cooked.

When chicken is done, remove oil and rinse out wok with water;
reheat pan. When hot, add orange peel and chicken; heat through -
about a minute – stirring gently.

DELICIOUS Honey Garlic Chicken Wings!

Last week, I made me and my Honey some Honey Garlic Chicken Wings for dinner, and let me just tell you -

If the way to a man's heart is through his stomach then I won my man's heart over twice!

I mean, he's a man, and let's face it, Ladies; men love wings, right?!?!

He could not get enough of these. Not only did he brag about them to our family, but he went to Sam's Club the next day to purchase another bag of frozen chicken wings so I can make these again soon. Like, real soon. Like, "I could eat these every single day" soon. His words.




What You'll Need:
2 cup flour
4 tspn salt
4 tspn black pepper
3 tblspn ground ginger
2 tblspn ground nutmeg
2 tspn ground thyme
2 tspn ground sage
2 tblspn paprika
1 tspn cayenne pepper
4 eggs
8 tblspn water

Directions:
Sift together the flour and spices. In a separate bowl, whisk together the eggs and water. Heat a skillet on the stove with about a half inch of canola oil, be sure to cover the bottom. Season the chicken wings with salt & pepper, then dip the wings in the flour and spice mixture. Then into the egg-wash and again into the flour/spice mixture. Fry the wings for about 4-5 minutes per side until golden brown and crispy. Drain the chicken wings on a paper-towel covered plate.

In the meantime....

Honey Garlic Sauce:
In a medium saucepan, add 2 tblspn olive oil, and 3-4 cloves minced garlic. Cook over medium heat to soften the garlic but do not let it brown. Add in 1 cup honey, 1/4 cup soy sauce and 1 tspn ground black pepper. Simmer together for 5-10 minutes, remove from heat and allow to cool for a few minutes. Be sure to keep an eye on the sace as it simmers because it can foam up very easily.

In a large glass baking dish, drizzle some BBQ sauce on the bottom of the pan. Scatter the wings on top. Using a cooking brush, pat each wing with the Honey Garlic Sauce just to ensure that they each get enough. Drizzle some BBQ sauce all over the wings and the remaining Honey Garlic Sauce.

Preheat the oven to 350 degrees and bake for 10 minutes.
