Spinach & Ricotta Pizza. That's amore.

It's Week #3 of my Food Challenge with my Sis!

Last night, it was Spinach & Ricotta Pizza for dinner.

I've always opted for the traditional pizza.
Y'know, the usual toppings: cheese & pepperoni, but since my Sis and I have started our weekly Food Challenge, I've been choosing recipes that I wouldn't normally make or even eat! I let my husband decide this week's challenge. I gave him 3 choices. He's a man who loves pizza so I don't even know why I bothered to ask him. I mean, really, why would he choose Pasta alla Carbonara or Fettuccine with Fresh Asparagus and Pancetta over Pizza?

Glad he went with this one because it is A-MAZING!

What You'll Need:
1 11oz. can Pillsbury Pizza Thin Crust
1 tblspn olive oil
1 tblspn grated parmigiano reggiano**
1/4 tspn garlic powder
A pinch of salt/pepper
1/2 small red onion - thinly sliced
1 cup fresh spinach
1 cup grated mozzarella
1/2 cup ricotta
1/4 tspn red pepper flakes

**I was NOT about to pay $8+ for parmigiano reggiano just to use 1 tblspn of it, so I opted for a block of regular Parmigiano instead. $3!


Directions:
Preheat oven to 450 degrees.
Unroll dough and place on a pizza pan (or baking sheet).
Brush the top of the dough with olive oil.
Sprinkle evenly with parmigiano and garlic powder. Season with salt/pepper.
Top with onions, spinach and mozzarella. Drop ricotta by tablespoon. Sprinkle with red pepper flakes.
Bake for approximately 8-10 minutes until golden.
